Jaclyn's creamy rice pudding recipe

This rice pudding is rich, creamy, and sooooo yummy! I hope you enjoy it as much as we do. ;)
 Ready In:
45 Min

Recipe 4 servings

Ingredients
·        1 1/2 cup uncooked white rice
·         2 1/2 cups milk, 
·         1/2 cup white sugar
·         1/4 teaspoon salt
·         1 egg, beaten
·         1 tablespoon butter
·         1/2 teaspoon vanilla extract

Directions: In a medium saucepan, bring 1 1/2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.

In another saucepan, combine 1 1/2 cup cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg. Cook 2 minutes more, stirring constantly. Remove from heat, and stir in butter and vanilla. Serve warm, or leave in refrigerator overnight and serve cold.

Grandma's Rhubarb Cream Custard Cake

Here is my Grandma's (really--MY Grandma's) recipe for Rhubarb Cream Custard Cake. It turns out to be like a cake on top and a pudding on the bottom. Mmmmmmmm.


Feeds 10+ people.


Ingredients:
1 box yellow cake mix + the ingredients it calls for on the back of the box
4 cups fresh rhubarb, chopped fine
1 cup white sugar
1 cup heavy whipping cream


Directions:


Preheat oven to 350*. Make the boxed cake mix according to the directions on the back of the box and pour the batter into a 9x13 greased baking pan. Pour the rhubarb over the cake batter. Sprinkle the sugar over that mixture and then pour the cream over the top of everything. Bake 55-60 minutes or until a toothpick inserted comes out clean. Yummmmmmmmy!!! ;)
